Organic Sugar

Sugar is the generic name for a range of carbohydrates but in culinary use it is more usually the name given to sucrose. Sugar occurs in most plants but realistically, the only commercial sources of sugar are from Sugar Cane (a large grass) in tropical regions and Sugar Beet (a root tuber) in higher latitudes.

Sugar comes in a variety of grades and colours for different uses. Raw, or Natural, sugar from sugar cane is largely un-refined and contains a good balance of the originally available nutrients, whereas white cane sugar has had virtually all the nutrients removed to give a sweet but flavour-free product useful for sweetening only. Unlike raw sugar (which is usually a pale brown colour), what is sold as 'brown' sugar is often made by adding molasses (a by-product of the refining process) to white sugar.
