Organic Pasta

Pasta is a simple food, usually made from just Durum wheat flour and water, although egg can also be used. The mixture is normally extruded and cut to form various shapes and then dried, although fresh pasta is increasingly available too. Durum wheat, being hard, protein-rich and low in gluten, is eminently suitable for pasta, particularly if it is going to be dried.

Cooking pasta is quick and easy. Basically you just add it to boiling water, stir often - particularly at first, and simmer for about 10 minutes until cooked. The pasta will absorb water and increase in size, so make sure the pan is big enough and has enough water, but don't over do it or you'll waste a lot of energy boiling unnecessary amounts of water. You can add salt to the water if you want to improve the flavour but again, don't over do it. I don't add any salt and never feel anything's missing. When cooked, the pasta will be firm but not hard. If you find it's cooked on the outside but not in the middle, simmer for a little longer on a low heat. Take care when testing - it's hot!

You can do a lot with pasta. My favourite is Tagliatelle with a stilton cheese and mushroom sauce.
